The Ingredients
  • 1/2L Frying Oil (grape seed or peanut)
  • 10 Quebec strawberries (raspberries would be perfect too)
  • 1 beautiful Pitaya (or other exotic fruits such as pineapple, passion fruit etc.)
  • 2 Whole eggs
  • 200g of Almond Powder
  • Salt to taste
  • Dip of your choice (tzatziki, commercial béarnaise or simple lemon juice)
Utensils
  • 1 cutting board
  • 1 knife
  • 1 saucepan
  • 1 small bowl
  • 1 deep bowl
  • Clean linen or paper towels
  • large fork or metal spatula

Steps to follow

  • STEP 01

    Meanwhile, cut out all the fruits and place them on your plate or on the tray.

  • STEP 02

    Beat the eggs into an omelette. Season with salt to taste. Pour the almond powder into the deep bowl. Set aside.

  • STEP 03

    Dry the squid rings in clean cloth or paper towels. Press slightly.

  • STEP 04

    Heat oil over high heat.

  • STEP 05

    Meanwhile, dip the squid rings in beaten egg and roll into almond powder.

  • STEP 06

    When the oil is hot, carefully immerse the squid in it. After a minute, turn with a fork or spatula to cook evenly.

  • STEP 07

    When the colour suits you, place them on paper towels (clean) for 30 seconds. Then arrange them on the presentation tray.

  • STEP 08

    Enjoy immediately with the dip of your choice.
