The Ingredients
  • 1 package of raw @bluetideca Jumbo Shrimp, tail deveined on
  • 1 jar of cocktail sauce
  • POACHING LIQUID:
  • 1 liter of water
  • 1 glass of white wine
  • 3 tablespoons of butter
  • 1/2 fennel bulb
  • 2 green onions
  • 1/2 lemon
  • A handful of mixed herbs (I used rosemary, dill and parsley)
  • 4 tablespoons Himalayan pink salt
  • 2 teaspoons peppercorns

Steps to follow

  • STEP 01

    Combine the liquid ingredients to be poached in a pot and bring to a boil Reduce the heat, simmer for 25 minutes

  • STEP 02

    Add raw shrimp and simmer until pink and cooked through

  • STEP 03

    Remove the prawns with tongs and put them in a sealed bag Soak in an ice bath to stop the cooking

  • STEP 04

    Place in the refrigerator until ready to serve. Serve with a cocktail sauce. Tip: Reserve the poaching liquid and use it in soaps, sauces, etc.
