The Ingredients
  • 1 sachet of pieces of homard 2 cups of chapelure
  • 3 green onions (just green)
  • 2 tablespoons of Mayonnaise with turmeric (or other)
  • A few drops of Worcestershire sausage 1
  • tablespoon of old-fashioned mustard
  • 3 large eggs
  • 1/2 cup sunflower huile
  • Salt and taste poivre
  • 1 citron

Steps to follow

  • STEP 01

    Slice the onions into slices. Reserve in a bowl.

  • STEP 02

    In this bowl, add the eggs, a cup of breadcrumbs, mayonnaise, Worcestershire sauce and mustard. Salt, pepper. Mix well.

  • STEP 03

    Add the lobster meat. Stir gently without breaking the pieces.

  • STEP 04

    Form 6 compact balls. Reserve.

  • STEP 05

    In a second bowl, beat the eggs. Salt and pepper.

  • STEP 06

    In the bottom of the plate, pour the other cup of breadcrumbs.

  • STEP 07

    Dip the lobster balls into the egg. Then roll them gently in the breadcrumbs. Reserve.

  • STEP 08

    In a frying pan, heat the oil over high heat

  • STEP 09

    When it is hot, place the balls in the pan. Using the spatula, turn them over after 30 to 45 seconds of cooking. Remove the lobster fritters from the pan and drain on paper towel for 2 minutes.

  • STEP 010

    Serve with the mayonnaise of your choice and a drizzle of lemon.
